Director of Quality Assurance & Food Safety The Quality Assurance and Food Safety Manager is responsible for comprehensive programs involving restaurant safety/sanitation, food quality, commercialization, and crisis management. This position is responsible for planning, developing, and administering all corresponding policies and procedures. Additionally, this person will need to ensure all food products meet or exceed our quality expectations while building a redundant supplier base to reduce supply disruptions and create a competitive landscape to help meet financial objectives. This role works very closely with Purchasing, Culinary, Legal, and Operations Development to ensure quality, safety and sanitation objectives are met. This position will be a part of the Supply Chain team and is located at the Restaurant Support Center in Downer's Grove, IL. RESPONSIBILITIES

  • Collaborate with Purchasing and Culinary to -build a world class supplier network that maintains or enhances quality, safety, and sanitation to support long term growth plans at Cooper's Hawk.
  • Provide technical expertise on corporate crisis management programs, including the further development of food safety related crisis procedures, and together with Risk Management, Legal and other departments, assisting with the resolution of food-borne illness reports.
  • Develop and lead a best in class recall program to ensure our guests safety.
  • Champions continuous improvement in food safety and sanitation by leveraging technology and providing user-friendly cost-effective solutions.
  • Partners with operations teams to support bottom performing restaurants and provides field guidance to remedy non-compliance (food safety training, corrective action plans, etc.).
  • Manage quality assurance and food safety documentation for all food products (seafood, meat, dairy, bread, and grocery items) including specifications, labeling, and vendor QA.
  • Manage proper sanitation standards in the restaurants and determine plans for proper handling and storage of all products.
  • Support the Culinary and Supply Chain teams with food testing, specification development and evaluations, shelf-life testing, label approvals, and new menu item tests and rollouts.
  • Assist Supply Chain with the approval process for new suppliers and product commercialization to help build a redundant supply.
  • Support Culinary with allergen and nutritional data ensuring compliance with Life Balance and allergen menus.
  • Work with Legal to provide food safety and compliance direction to meet standards and regulatory requirements. Assists with annual Program Review to verify compliance with regulatory and company standards.
  • Evaluates opportunities to further leverage technology to improve quality of data, efficiency, and/or -efficacy for teams.
  • Responsible for development/maintenance of HACCP, BAP, SQF, MSC/ASC and Gluten Free certifications, programs, and documentation.
  • Conduct routine distributor and supplier audits to review all products and processes to support continual improvement in Cooper's Hawk vendor network
  • Measure supplier compliance to quality and food safety standards through product reviews, Cooper's Hawk quality management systems, and onsite -facility -evaluations.
  • Develop vendor performance tracking and scorecard programs for all suppliers.
  • Own relationship with third party sanitation auditors including review of all audits, follow up action plans, reports and inquires.
  • Directs and develops the audit and approval programs for food, packaging, distribution, and sanitation at Cooper's Hawk vendor facilities.
  • Lead the investigation and evaluation of foreign object samples and food illness reports submitted as part of the customer claims resolution process. Skills & Requirements
    • Must represent Cooper's Hawk values
    • Bachelor's Degree in food science or equivalent
    • 5 plus years of experience in quality assurance/food safety
    • 2 plus years of experience in restaurant industry
    • Experience developing and maintaining QA product evaluation procedures and SOPs
    • Experience in food production, supply management, or manufacturing
    • Knowledge of FDA and GMP standards
    • HACCP certification
    • Familiar with manufacturing process and equipment
    • Excellent oral and written communication skills
    • Ability to work in fast-past environment
    • Strong interpersonal skills
    • Ability to work independently and comfortably in a multi-disciplinary team
